I saw this amazing pineapple and watermelon popsicle mold and I was so excited to create Pineapple Coconut Rum boozy summer pops in them! How charming is that pineapple shape?! They work really well too and you can play around with different ingredients to create delicious tropical flavors! Since coconut and pineapple go so perfectly together, I decided to make a pineapple coconut combo with rum for an irresistible frozen treat for this hot summer we’re having! I really like the tropical flavor combination with pineapple, orange, honey and coconut milk. You can find the mold here! Next up, watermelon pops using the mold, but for now you can check out our Watermelon Margarita pops or for the health-conscious our Coconut Water Fruit pops!

Pineapple Coconut Rum Popsicles

Serves: 8 Popsicles
 
Measurements Ingredients
  • 5 slices pineapple About ¾ of a pineapple. If you want super smooth pops, make sure you remove the middle of the pineapple and only use the outside ring
  • 1/2 cupfresh orange juice
  • 1/2 cupcoconut milk
  • 2 tablespoonhoney
  • 3 tablepsoonscoconut rum
  • 1 tablespooncoconut oil
Directions
  1. Add all of the ingredients into a blender and blend until super smooth,
  2. Pour into these popsicles molds using wooden popsicle sticks.
  3. Freezer over night.

    What can you add in place of the coconut oil? Can you just add another Tablespoon of the milk as it has so much fat in it already or does it change the texture to much?
