The sunset swan is a delightful and refreshing tropical cocktail. Made with rum, mango and pineapple, it’s perfect for those summer months!

My gold swan punch bowl was begging for me to make a cocktail in it! Its quirky and playful style reminded me so much of summer and just having fun, I had to buy it.

For the drink, aptly named the Sunset Swan cocktail, I knew the perfect cocktail to serve in the bowl needed to be bright and tropical, so I turned to my favorites… fresh pineapple juice and coconut rum.

You can never go wrong with these flavors when creating a vibrant, beachy cocktail! I added in some fresh mango juice, lime and a homemade ginger simple syrup and we felt like we were lounging on the beach when sipping it!

This Sunset Swan cocktail recipe is easy and perfect for a hot summer day!

How To Make This Tropical Cocktail – Step By Step

  • Using a juicer, juice the pineapple and mango.
  • To make the ginger simple syrup add ½ cup ginger juice and ½ cup granulated sugar and simmer in a small saucepan until the sugar has dissolved.
  • Add the pineapple juice, mango juice, coconut rum, lime, and 1-ounce ginger simple syrup in a small punch bowl with ice.
  • Stir to let the ice mix and dilute the cocktail.
  • Serve over Ice

Fresh Juice In This Tropical Cocktail

I also like to make my own juice for cocktails. There’s no comparison when it comes to fresh-pressed juice vs store-bought.

I’ve been loving this juicer because it’s small and easy to clean and let’s be real, no one wants to pull out a giant juicer to make a cocktail and then be left with a huge mess to clean up.

Punch – The Perfect Party Drink

As much as we love a cocktail shaken up in front of us, punch is perfect when we’re hosting a crowd. It’s an easier, more hands-off approach that leaves you with more time for chatting with friends instead of minding the bar.  And this tropical cocktail punch is great for gatherings

Take advantage of this big-batch drink’s make-ahead advantages but within a reasonable amount of time. Prepare to punch the morning of when you plan to serve it, and no more than a day ahead of time.

Serving punch in a container that’s too small defeats the point. This is a beverage much more suited to big bowls, containers, or large pitchers. Find the right container so you can set the punch out and leave guests to help themselves without the worry of it running out.

Stir the punch from time to time, so that all the ingredients mix and there’s no settling on the bottom. Also, occasionally ladle some punch from the bottom and pour back over the ice, this way the punch stays cool throughout.

Homemade Simple Syrup

Simple syrup really lifts a cocktail, giving it depth and body. You can buy it, but it’s so…simple to make! Perfect for this tropical cocktail.

Just add the ginger juice and sugar together, heat until the sugar has dissolved and voila!

Simple syrups have a decent shelf life when prepared and stored properly: made with very hot water and stored in a sterile container in the refrigerator.

But left too long, your syrup can get moldy, so make only quantities that you’re likely to use within a reasonable time frame. Stored in the refrigerator, 1:1 hot-process simple syrup should last 1 month.

Top Tips For This Tropical Cocktail

  • If you can, go for fresh fruit juice.
  • Don’t mix too far in advance, ideally mix the morning of the party.
  • Add ice close to serving, stir to let the ice mix in and dilute the cocktail.

Ingredients 

  • 16 ounces fresh pineapple juice
  • 8 ounces fresh mango juice
  • 1 ounce ginger simple syrup
  • 5 ounces coconut rum
  • 1 lime squeezed for juice
