Making Leprechauns proud with these marshmallow-stuffed Lucky Charms Cupcakes! This recipe is one for the pot o’ gold!

We wanted to make something colorful and fun for Saint Patrick’s Day and had to incorporate our favorite Lucky Charms cereal! Just like our Lucky Charms Ice Cream, how can anyone resist those colorful, adorable charm marshmallows?! This Lucky Charm cupcake recipe uses a classic vanilla cupcake, filled with marshmallow fluff and Lucky Charms marshmallows. The cupcake is then topped with a colorful buttercream frosting. These fun treats are magically delicious!

I’ve tried several white, vanilla cakes and this is one of our favorite recipes. It reminds me of the classic white cake box mix I used to make when I was a kid. Paired with a bowl of Lucky Charms cereal and I’m living my 90’s childhood again!

If you have the extra time, you can make cereal milk to add more of a kick to the cupcake recipe. Once you divide the marshmallows from the frosted oats, you can combine 1 cup frosted oats to the 1 1/2 cups of whole milk you’ll use in the cake batter. Infuse the flavors together for about an hour, then strain the cereal out and use that milk in the cupcake batter.

Fill the cupcake pan with unbleached brown cupcake liners. Using a cookie scooper, scoop two times in one cupcake tin, about 3/4 of the way full. Bake the cupcakes in a 350 degree oven for about 12 minutes.

Once the cupcakes are cooled, scoop out a little cake in the middle and fill with a small spoonful of marshmallow fluff. You can use the fluff you buy at the store. Then , just add in some of the Lucky Charms marshmallows for a special treat when you bite into the center! It’s magical.

Making the colorful buttercream frosting was the fun part! The recipe is very easy to make, it’s just butter, confectioner’s sugar and vanilla extract. Divide it evenly into 5 bowls and dye using the colors inspired by Lucky Charms. I used pink, purple, blue, green and yellow. One drop of each color should be enough.

Once all of the colors are blended, scoop buttercream from each color into a piping bag. Keep layering colors, so all the colors can come out together for a rainbow effect.

To frost the cupcakes, pipe a cupcake swirl and watch the color magic happen! Wilton has a great tutorial on creating a cupcake swirl.

Add a little “luck” to the top of the cupcake. My favorite Lucky Charms marshmallows are the horseshoe and the rainbow.

The center has a sweet marshmallow filling and Lucky Charms marshmallows inside!

Ingredients

Vanilla Cupcakes

  • 2 1/4 cup cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cup whole milk
  • 4 large egg whites
  • 2 cups sugar
  • 1/2 cup butter, room temperature
  • 1 1/2 teaspoon vanilla extract
  • 1 jar marshmallow fluff
  • 1 box Lucky Charms Cereal

Buttercream Frosting

  • 4 sticks unsalted butter, room temperature
  • 4 cups confectioners sugar
  • 3 teaspoons vanilla extract
  • 5 colors food coloring (green, purple, pink, blue and yellow.

Instructions

To Make the Vanilla Cupcakes

  1. Sift together flour, baking powder and salt and set aside.

  2. Beat the butter and sugar on high until light and fluffy.

  3. Using a fork whisk egg whites, milk and extract together in a bowl.

  4. Alternate the dry and wet ingredients into the butter mixture beating on medium until incorporated. 

  5. Fill cupcake molds 3/4 of the way full. 

  6. Bake in a 350 degree oven for 12-15 minutes. Start with 12 minutes, check on the cupcakes and if they need more time leave them in for another few minutes. Do not over bake.  

  7. Once cooled, remove a little from the center and fill with marshmallow cream and a few Lucky Charms marshmallows! 

How to Make the Buttercream Frosting

  1. In an electric mixer, combine the room temperature butter and beat until smooth.

  2. Add in the sugar and the vanilla and continue to beat until smooth and fluffy. 

  3. Divide the buttercream into four bowls and dye each one a different color. Pink, blue, green, yellow and purple. Use about one to two drops for each color. 

  4. In a piping bag, with the fitted tip scoop a small amount of each color next to each other, or on top of. Repeat until the bag is full. You want a rainbow effect, so you can't scoop all the color in at once, it needs to be divided throughout the bag to come out with all the colors. 

  5. Pipe the frosting onto each marshmallow filled cupcake and add a Lucky Charm to the top!
