Roasted cherry gin sodas are a light and refreshing cocktail. They are made with roasted cherries toasted with maple syrup and vanilla, then muddled with lemon juice and gin and topped with tonic water. They are flavorful and perfect for summer.

Summer is here, and what better way to cool off than with a refreshing cherry soda? But why settle for store-bought when you can make your own at home? I made cherry gin sodas with roasted cherries, lemon juice, soda water, and a splash of alcohol for an extra kick.

These cherry gin sodas are the perfect summer cocktail, like my strawberry tequila sodas! It’s a light cocktail that’s filled with flavor. Roast the cherries the day before and store them so you do not have to do it on the day.

Serve these with a fresh cherry pie or crisp for the ultimate summer treat!

How to Make Cherry Gin Sodas

The first step in making a delicious cherry soda is roasting the cherries. This not only brings out their natural sweetness but also adds depth and complexity to the flavor profile. Cut the cherries in half, remove the pits, then toss them with maple syrup and vanilla bean seeds. Roast them in the oven for a few minutes until they are soft and bubbling.

Once your roasted cherries are ready, it’s time to assemble your cherry soda. Muddle a few roasted cherries in a glass with a splash of lemon juice. This will release even more flavor from the cherries and add a tangy element to the soda.

Then, add your choice of alcohol—gin or vodka, which works great with this recipe. Top it off with some tonic water and give it a quick stir.

Roasted Cherry Gin Sodas Recipe

Ingredients 

Roasted Cherries

  • 1 cup cherries, pitted
  • 2 tbsp maple syurp
  • 1/2 whole vanilla bean , scoop the beans out

Cherry Gin Sodas

  • 1 1/2 tbsp roasted cherries, scoop about 4 halves into the glass
  • 1 ounce gin , or vodka
  • 1/2 ounce lemon juice
  • 3 tbsp tonic water , or soda water

Instructions 

Roasted Cherries

  • Preheat the oven to 400 degrees. Line a rimmed baking sheet with parchment.
  • Slice the vanilla bean in half lengthwise. Using a small knife, scrape the seeds out of the vanilla bean pod and into a bowl.
  • Add the vanilla bean pod, the cherries, and 1 tablespoon of maple syrup.
  • Toss to coat the cherries.
  • Transfer to the baking sheet and roast in the oven for 5-10 minutes, until soft and bubbling.
  • Remove from the oven and set aside.

Cherry Gin Sodas Recipe

  • Muddle the cherries into each glass with 1/2 ounce lemon juice.
  • Add the gin (or vodka) and fill with ice.
  • Top each glass with about 3 tbsp tonic water or soda water.

Notes

  • Add more sweetener if you prefer a sweeter drink.
  • Use tonic water or soda water, whatever you like. 
  • Vanilla extract or vanilla bean paste will work, too.
