A fruity and fun twist on a classic Tom Collins recipe! We’ve added grapefruit-infused vodka and muddles strawberries to make grapefruit strawberry collins! It’s absolutely delicious!
This grapefruit strawberry collins cocktail is just divine. It has a very flavorful and present grapefruit taste, one that you can’t just get with using juice! The strawberries add a little extra touch of berry sweetness.
The best part about this grapefruit cocktail is that every part of the grapefruit was used… literally!
The vodka was first infused with grapefruit slices 4 days before use, the middle of the grapefruit was used to make the juice and the peels were made into candied grapefruit for garnishing!
How to Infuse Vodka
Infusing vodka has to be one of the easiest things you can do! Literally, it’s vodka and the ingredient you want to infuse within the spirit. You can use fruit, berries, spices and even candy! I’ve seen bubblegum infused vodka before!
- Pour two cups vodka into a glass jar with a lid.
- Cut 1/2 of a grapefruit into slices. Add it into the vodka, rind and all!
- Let it infuse with the lid on for 3-5 days.
- Store it in the refrigerator.
What is a Tom Collins?
Before we make the grapefruit collins, let’s talk about what a Tom Collins is. It’s a cocktail that dates back to 1860 and it traditionally a cocktail served in a highball glass. The ingredients are simple, consisting of lemon juice, gin, sugar, and carbonated water.
We’ve added a fun and fruity twist and added grapefruit and strawberries with a sugared rim!
How to Make a Grapefruit Strawberry Collins
Ingredients
- Strawberries
- Simple Syrup – Check out our guide to making simple syrup here.
- Lemon Juice
- Grapefruit Juice
- Grapefruit-infused Vodka
- Club Soda
Directions
- Muddle the strawberries in a cocktail shaker.
- Add in the rest of the ingredients except the club soda.
- Add in ice and shake for 20 seconds.
- Garnish two glasses with citrus rimming sugar.
- Add ice into the glasses and strain the cocktail over the ice, shaking the shaker until it all comes out.
- Add a dash of club soda over the top and stir.
- Garnish the glasses with a strawberry, lemon slice and of course candied grapefruit!
So save those peels and follow this recipe to make the candied grapefruit! It does take some time to make, but everything can be pre-made and kept in the fridge, so you’re just tossing it in the cocktail shaker to enjoy.

- 2 large organic strawberries
- 1 1/2 ounces simple syrup
- 1 1/4 ounces lemon juice
- 4 ounces grapefruit juice
- 2.2 ounces grapefruit-infused vodka, recipe below
- A dash of club soda

- 2 cups good quality vodka
- 1/2 grapefruit cut into slices
Instructions

- Muddle the strawberries in a cocktail shaker.
- Add in the rest of the ingredients except the club soda.
- Add in ice and shake for 20 seconds.
- Garnish two glasses with citrus rimming sugar
- Add ice into the glasses and strain the cocktail over the ice, shaking the shaker until it all comes out.
- Add a dash of club soda over the top and stir.
- Garnish the glasses with a strawberry, lemon slice and of course candied grapefruit!
Grapefruit-Infused Vodka Recipe
- Put the ingredients together in an jar that seals with a lid and wait 3-5 days. Strain into a bowl with a spout and discard the grapefruit. Pour the vodka back into the jar and save in the refrigerator.
