I have always loved sake and making fun cocktails with it. It’s a traditional Japanese alcoholic beverage made from fermented rice. Typically, sake has a lower alcohol content than spirits like vodka or gin, making this cocktail a lighter option.

You can make this cocktail year-round, but I loved the light green color for Halloween, and it’s an excellent option for a lighter drink.

Cucumbers: These add a cool, refreshing base to the drink, offering a crisp, subtle flavor that complements the sake.

Lime juice: Provides a bright, tangy acidity that balances the sweetness and adds a zesty kick.

Simple syrup: A touch of sweetness to smooth out the tartness of the lime and balance the drink.

Sake: The star of the cocktail, this light rice wine brings a smooth, delicate flavor with a lower alcohol content.

Egg white: This is optional, however it creates a silky, frothy texture, giving the cocktail a luxurious mouthfeel and a beautiful foam top.

Chill Your Sake: Keep your sake chilled before making the cocktail to ensure a crisp and refreshing drink.

Dry Shake for More Foam: Shake the cocktail ingredients without ice first (dry shake) to fully emulsify the egg white, creating a frothy foam on top.

Garnish Creatively: Besides the herb bundle, try garnishing with a cucumber ribbon or a lime twist for extra flair.

Ingredients 

  • 4 large cucumber slices
  • 1 oz lime juice
  • 3/4 oz simple syrup
  • 2 1/2 oz sake
  • 1 large egg white

Instructions 

  • Muddle the cucumbers: In a shaker, muddle four slices of fresh cucumber until you’ve extracted all the juice and flavor.
  • Add the remaining ingredients: 1 ounce of freshly squeezed lime juice, 3/4 ounces of simple syrup, 2 1/2 ounces of sake, and 1 egg white.
  • Shake: Shake all the ingredients together with ice to froth up the egg white and create that luscious foam.
  • Strain and serve: Strain into a coupe or martini glass.
