These are my favorite Belgian waffles, the kind that are crisp on the outside and incredibly fluffy inside. The secret is to whip the egg whites and gently fold them into the batter. It gives the waffles that light, airy texture that makes them feel extra special.

Belgian Waffle Ingredients
Eggs (2 large, separated): Separating the eggs is the secret to fluffy waffles. The whipped egg whites create an airy batter that makes the waffles light and soft.
Whole Milk (1 cup): Adds richness and helps create a smooth batter.
Yogurt (1 cup): Yogurt keeps the waffles tender and gives them a slight tang that balances the sweetness.
Unsalted Butter (½ cup, melted and slightly cooled): Butter adds flavor and helps create crispy golden edges.
Sugar (¼ cup): Adds a touch of sweetness and helps the waffles caramelize in the waffle iron.
Vanilla Extract (1 tablespoon): Adds warm flavor that makes these waffles taste bakery-level good.
All-Purpose Flour (2 cups): The base of the batter that gives structure to the waffles.
Baking Powder (2 teaspoons): Helps the waffles rise and become fluffy.
Kosher Salt (1 teaspoon): Balances the sweetness and enhances the flavor.
How to Make Belgian Waffles (Video)
1. Whip the Egg Whites: Separate the eggs and whip the egg whites in a bowl until stiff peaks form. This is what makes the waffles fluffy.
2. Mix the Wet Ingredients: In another bowl, whisk together the egg yolks, milk, yogurt, melted butter, sugar, and vanilla.
3. Add Dry Ingredients: Add the flour, baking powder, and salt. Mix gently until just combined. A few lumps are perfectly fine — do not overmix.
4. Fold in the Egg Whites: Gently fold the whipped egg whites into the batter until you no longer see large streaks. Be careful not to deflate the batter.
5. Cook the Waffles: Heat a Belgian waffle maker. Add about 1 cup batter, close the lid, and rotate if using a rotating waffle iron, and cook until golden and crisp.
Serve immediately with your favorite toppings.

Ingredients
