This coconut margarita spritz is a creamy, coconut-flavored margarita topped with prosecco. It’s made with tequila, fresh lime juice, coconut cream, and bubbles, and it comes together in one big pitcher, making it the perfect batch cocktail for summer entertaining!

I know, a margarita and a spritz in the same glass sounds a little rebellious. But one sip and you’ll get it. The coconut makes it smooth, the lime keeps it fresh, and the prosecco adds the prettiest fizz, just like it does in my strawberry Aperol spritz. It basically tastes like a margarita went on vacation. And since it’s a pitcher cocktail, you can actually enjoy your own party instead of playing bartender all night. Ingredients

Tequila: Use a good 100% agave blanco tequila. It’s smooth and lets the coconut shine. It’s the same tequila I use in my skinny margarita.

Fresh lime juice: Always fresh squeezed, never bottled. It makes all the difference!

Coconut cream: This is the liquid, unsweetened kind, not cream of coconut. It gives the drink smooth coconut flavor without making it too sweet.

Coconut water: It lightens the drink and adds subtle coconut flavor without any heaviness.

Simple syrup: Equal parts sugar and water simmered until dissolved. Adjust to taste; you can always add more. Follow my guide to making simple syrup.

Sparkling water: Adds extra bubbles, keeping the cocktail light and refreshing.

Prosecco: This is what makes it a spritz! Use a brut prosecco so the drink doesn’t get too sweet. Cava or any dry sparkling wine works beautifully too.

How to Make a Coconut Margarita Spritz

  1. Fill a large pitcher halfway with ice and pour in the tequila, lime juice, coconut cream, coconut water, and simple syrup. Stir until combined.
  2. Just before serving, gently stir in the sparkling water and prosecco.
  3. Pour over ice into glasses, garnish with lime wheels, fresh mint, or a little toasted coconut on the rim, and serve immediately.

What’s the difference between coconut cream and cream of coconut?

They sound the same but they’re very different! Coconut cream is liquid, unsweetened, and has pure coconut flavor. Cream of coconut (like Coco Lopez) is thick, syrupy, and heavily sweetened. This recipe uses coconut cream. If you only have cream of coconut, cut the simple syrup way back or your drink will be too sweet.

Can I make this coconut margarita spritz ahead of time?

Yes! Mix the tequila, lime juice, coconut cream, coconut water, and simple syrup up to a day in advance, then keep it chilled. Add the sparkling water and prosecco right before serving so the drink stays bubbly. The full batch makes about 8 cocktails.

What tequila is best for a coconut margarita?

A 100% agave blanco tequila is best. It’s clean and smooth, and it lets the coconut and lime do the talking. Save the aged tequilas for sipping.

Ingredients 

  • 12 ounces Tequila , blanco
  • 13 ounces Coconut Cream, liquid not sweet
  • 10 ounces Coconut Water, pure coconut water, unsweet
  • 12 ounces simple syrup, follow my simple syrup guide
  • 6 ounces Sparkling Water
  • 14 ounces Prosecco

Instructions 

  • Fill a large pitcher 1/2 full with ice, then pour in the tequila, lime juice, coconut cream, coconut water, and simple syrup until well combined.
  • Just before serving, gently stir in the sparkling water and prosecco.
  • Pour over ice into glasses, garnish with lime wheels, fresh mint, or a little toasted coconut on the rim, and serve immediately.
