This creamy coconut mojito is one of my favorite summer cocktails. It’s smooth, sweet, and loaded with tropical vibes. I make it every time I want a little vacation in a glass!

Coconut Mojito Recipe

I make this coconut mojito every summer, and it always disappears first -especially when I set up a mojito bar!

Coconut Mojito Ingredients

Fresh Mint Leaves: Essential for any mojito, adding fresh herbal notes.

White Rum: Use any white rum or coconut rum you have.

Lime Juice: Always use fresh lime juice for the best flavor.

Cream of Coconut: Adds creaminess and a rich coconut flavor. Recommended brand: Real Coco Cream of Coconut.

Coconut Milk: Adds a light, milky touch. Use canned coconut milk for best results.

Club Soda or Sparkling Water: Adds a refreshing fizz. For a coconut twist, use a bit of coconut water.

Shredded Coconut: Garnish with sweetened or toasted shredded coconut for a festive look.

How to Make a Coconut Mojito

  1. Muddle the Mint – Place fresh mint leaves and a bit of sugar (optional) at the bottom of a highball glass. Muddle gently to release the mint’s aroma.
  2. Add Ingredients – Pour in the coconut cream, coconut milk, lime juice, and white rum. Stir to combine.
  3. Top with Club Soda – Finish by adding a splash of club soda or sparkling water.
  4. Garnish – Add shredded coconut, lime zest, or a sugar cane stick for extra style.

Ingredients 

  • 6 leaves mint
  • 1/2 ounce cream of coconut
  • 2 ounces white rum
  • 1/2 ounce lime juice
  • 3 ounces coconut milk
  • 1 ounce club soda , more if you prefer

Instructions 

  • Muddle the Mint: Place the mint and the cream of coconut in a highball glass. Using a cocktail muddler, gently press down on the mint to release the aromas and flavor.
  • Stir: Add the rum, lime juice, coconut milk, and ice to the glass and stir.
  • Top it: Pour club soda over the top.
  • Garnish: Then garnish it with a lime wheel or lime wedge, fresh mint sprig, and shredded coconut. 

Notes

For an extra coconut flavor, use coconut rum. This will boost the flavor even more. We use it in our classic pina colada, and it’s perfection.
If you want to use something other than simple syrup, muddle 1 tbsp sugar with the mint leaves.
